Spinach Quiche Tartlets

This recipe yields 12 tartlets

ingredients:

1 T. butter
½ C leeks
1 large bunch of Spinach
½ tbsp Basil
3 T. fat-free milk
¼ tsp salt
dash of pepper
2 large eggs
2 large egg whites
Pillsbury Pie Crust

Preheat oven at 375 degrees.

Heat butter, and sauté leeks until translucent; add spinach and cook until wilted.

Remove mixture and place on cutting board and let cool. Place Basil on cutting board.

Make egg mixture: Whip milk, salt, pepper, eggs and egg whites. Set aside.

Chop Spinach, leek and Basil mixture, and mix into egg mixture.

Roll out pastry on Roul'pat, and cut out rounds using the 3 ½" Round Dough Cutter

Place Tartlet Tray on baking tray (if using silicone bakeware). 

Place each round on each tartlet mold.

Add 1-2 T. of mixture onto each tartlet and sprinkle with Cheddar cheese.

Bake for 20 minutes or until golden brown.

 

 

 

Note about recipes that require baking: none of my instructions call for "greasing the pan". The Silpat and Silicone Bakeware "Flexipan" molds which I use do not require additional grease. If you're using a traditional baking pan or sheet, you must 'grease the pan'.
