Pepe's Spinach Artichoke Dip

Here's a recipe that's a huge hit! Compliments from my friend Pepe from the Cuban Cuisine Yahoo Group.

2 boxes frozen chopped spinach
1 can artichoke hearts
1 - 8 oz. pack philadelphia cream cheese (may use light but not fat free)
1 - 8 oz. cup sour cream (may use light but not fat free)
3/4 cup grated parmesan cheese
1 - 8 oz pack shredded monterrey jack cheese
1 medium onion finely chopped
8 garlic cloves finely diced
1 stick of butter
crushed red peppers to taste
salt & pepper to taste

cook spinach and drain well
drain and mash artichoke hearts
in a large skillet/sauce pan melt the butter
saute onions and garlic in the melted butter
blend spinach until well blended
add cream cheese and continue blending until well blended
add sour cream and continue blending
add parmesan cheese until well blended
now add the mashed artichoke hearts and continue blending
add crushed red peppers, salt & pepper and continue blending
remove pot from the stove
place mixture in microwave safe pot
top with shreddded monterrey jack cheese
do not mix
microwave for 4 or 5 minutes on high
serve hot with chips

Please note regarding baking recipes: not many of my instructions call for "greasing the pan" or using non-stick spray. The Silpat and Silicone Bakeware which I use do not require additional grease. If you're using a traditional baking pan or sheet, you must either apply butter or spray with non-stick spray.
