Corn and Pepper Salsa
Serve with chips or as compliment to roasted or grilled chicken.
2 ears corn -- boiled and cooled, corn removed from husks
1/2 medium red onion -- chopped
1 juice of lime
1/2 red pepper -- chopped
2 small Serrano peppers -- chopped and seeds removed
1 tablespoon cilantro -- chopped
2 leaves mint -- chopped
4 drops chocolate habanero vinegar (or red wine vinegar and hot sauce to taste)
1 tablespoon roasted garlic Olive Oil
salt and pepper -- to taste
Mix all ingredients in a large bowl.
